Ingredients

2 boneless, skinless chicken breasts

8 oz (225g) penne pasta

1 cup sun-dried tomatoes in oil, chopped

3 cloves garlic, minced

1 cup fresh spinach, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup chicken broth

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil, for garnish

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt, pepper, and Italian seasoning. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and sear for about 6-7 minutes per side, or until cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

      Create the Sauce: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the chopped sun-dried tomatoes, cooking for another 2-3 minutes.

        Add Cream and Spinach: Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer, then add the chopped spinach, stirring until wilted.

          Combine Ingredients: Add the cooked penne pasta and sliced chicken into the skillet. Toss to coat the pasta and chicken evenly with the creamy sauce. Stir in the grated Parmesan cheese and adjust seasoning with salt and pepper as desired.

            Serve: Plate the pasta and garnish with fresh basil and an extra sprinkle of Parmesan if desired.
