Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 large onion finely diced
  • 3 cloves garlic minced
  • 1 pound ground beef
  • 1 pound ground turkey
  • 2 cans 15 oz each kidney beans, drained and rinsed
  • 1 can 15 oz diced tomatoes, with juices
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • to taste salt and freshly ground black pepper
  • 1 cup beef or vegetable broth
  • 1 bell pepper diced
  • 1 jalapeño finely diced optional

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Sauté onion until translucent, about 5 minutes.
  • Add minced garlic and cook for 1 minute.
  • Add ground beef and turkey, breaking it apart, and cook until browned, about 7-10 minutes.
  • Drain excess fat, then add bell pepper and jalapeño, sauté for 3 minutes.
  • Incorporate kidney beans, diced tomatoes, chili powder, cumin, smoked paprika, salt, and pepper.
  • Pour in broth and bring to a simmer, then reduce heat and cover.
  • Simmer for at least 30 minutes, stirring occasionally, for richer flavor let it simmer for 1-2 hours.
