Ingredients

  • 1 lb ground beef
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 2 cups frozen mixed vegetables
  • 1 can diced tomatoes with green chilies
  • 1 can cream of mushroom soup
  • 2 cups shredded sharp cheddar cheese
  • 4 large baking potatoes thinly sliced
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • to taste salt and freshly ground black pepper
  • 1 tbsp extra-virgin olive oil
  • for garnish fresh parsley chopped

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat, add onion and garlic, and sauté until translucent.
  • Add ground beef to the skillet, breaking it apart as it cooks until browned, then drain excess fat.
  • Stir in frozen vegetables, diced tomatoes, cream of mushroom soup, oregano, paprika, salt, and pepper; cook for 5 minutes.
  • Grease a 9x13-inch baking dish with olive oil and layer half of the sliced potatoes on the bottom.
  • Pour half of the beef mixture over the potatoes, then sprinkle half of the cheese on top; repeat the layers.
  • Cover with aluminum foil and bake for 45 minutes, then remove foil and bake for an additional 15 minutes.
  • Once baked, let cool for a few minutes and garnish with chopped parsley before serving.
