Ingredients

  • 1 lb ground beef or ground turkey
  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz sweet corn, drained
  • 1 can 10.5 oz cream of mushroom soup
  • 1 cup shredded sharp cheddar cheese
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • Salt and freshly ground black pepper to taste
  • 1 bag 32 oz frozen tater tots
  • ½ cup sour cream optional, for serving
  • Freshly chopped green onions or cilantro for garnish optional

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, cook the ground beef or turkey over medium heat until browned, then drain excess fat.
  • Add the diced onion and minced garlic, sauté for 3-4 minutes until the onion is translucent.
  • Stir in black beans, corn, cream of mushroom soup, chili powder, cumin, salt, and pepper. Simmer for 5 minutes.
  • Transfer the mixture to a greased 9x13 inch baking dish, spreading evenly.
  • Sprinkle shredded cheddar cheese over the meat mixture.
  • Arrange frozen tater tots in a single layer on top of the cheese.
  • Bake for 30-35 minutes until the tater tots are golden brown and crispy.
