  • 1 lb ground beef or turkey
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 1 string green bell pepper diced
  • 1 string red bell pepper diced
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz diced tomatoes (with their juices)
  • 1 can 8 oz tomato sauce
  • 2 cups beef or vegetable broth
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp freshly ground black pepper
  • 1 cup corn fresh, frozen, or canned
  • optional toppings: shredded cheese sour cream, chopped green onions, diced avocado

Instructions

  • In a large pot, heat the ground beef or turkey over medium heat until browned.
  • Add the chopped onion, minced garlic, and diced bell peppers; sauté for 5-7 minutes.
  • Stir in the kidney beans, black beans, diced tomatoes, tomato sauce, and broth.
  • Add chili powder, cumin, smoked paprika, salt, and black pepper; mix well.
  • Bring to a gentle boil, then reduce heat and simmer uncovered for 30-40 minutes.
  • In the last 10 minutes, fold in the corn and adjust seasoning if needed.
