Ingredients

1 lb ground beef

1 cup mashed potatoes (prepared and cooled)

1/2 cup shredded cheddar cheese

1/2 cup diced cooked bacon

1/4 cup chopped green onions (scallions)

1/2 cup breadcrumbs

1 large egg

2 cloves garlic, minced

1 tsp onion powder

1 tsp Worcestershire sauce

Salt and pepper to taste

1/4 cup ketchup (for topping)

1/4 cup milk (optional for moisture)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C).

Mix Ingredients: In a large bowl, combine the ground beef, mashed potatoes, shredded cheddar cheese, diced bacon, green onions, breadcrumbs, egg, minced garlic, onion powder, Worcestershire sauce, and season with salt and pepper. If the mixture seems too dry, add milk gradually until desired consistency is achieved.

Shape Meatloaf: Transfer the mixture to a lined or greased loaf pan. Shape it into a loaf form, ensuring it’s evenly distributed.

Add Topping: Spread ketchup over the top of the meatloaf for added flavor and moisture during baking.

Bake: Place the meatloaf in the preheated oven and bake for approximately 1 hour, or until the internal temperature reaches 160°F (70°C).

Rest Before Serving: Allow the meatloaf to rest for about 10 minutes before slicing to ensure it holds together.

Serve: Cut into slices and serve with a side of vegetables or a fresh salad.
