Ingredients

1 cup all-purpose flour

2 large eggs

1 1/2 cups milk

2 tablespoons granulated sugar

1 teaspoon pure vanilla extract

2 tablespoons melted butter (plus extra for cooking)

Pinch of salt

Instructions

In a large mixing bowl, whisk together the flour, eggs, milk, sugar, vanilla extract, melted butter, and salt until the batter is smooth and free of lumps. Let the batter rest for at least 30 minutes to allow the flour to hydrate.

    Heat a non-stick skillet or crepe pan over medium heat and add a small amount of butter, swirling to coat the bottom.

      Pour about 1/4 cup of the batter into the center of the pan and immediately swirl the pan to spread the batter into a thin, even layer.

        Cook for about 1-2 minutes on one side, or until the edges begin to lift and the bottom is lightly golden. Carefully flip the crepe using a spatula and cook for another 30 seconds on the other side.

          Remove the crepe from the pan and place it on a plate. Repeat the process with the remaining batter, adding more butter to the pan as needed.

            Serve warm with your choice of toppings such as whipped cream, fresh berries, chocolate sauce, or a sprinkle of powdered sugar.
