  • 1 tablespoon extra virgin olive oil
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 2 medium carrots peeled and diced
  • 1 medium bell pepper diced
  • 2 cans 15 oz each white beans, drained and rinsed
  • 1 can 15 oz sweet corn, drained
  • 4 cups vegetable broth
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • to taste salt
  • to taste freshly ground black pepper
  • 1 cup unsweetened almond milk
  • for garnish fresh cilantro leaves
  • for serving lime wedges

Instructions

  • Heat the olive oil in a pot over medium heat until shimmering.
  • Sauté the onion for about 5 minutes until soft and translucent.
  • Add garlic, carrots, and bell pepper; sauté for 3-4 minutes until tender.
  • Stir in white beans, sweet corn, vegetable broth, cumin, oregano, paprika, salt, and pepper.
  • Bring to a gentle boil, then lower heat and simmer uncovered for 20 minutes.
  • Pour in almond milk and heat through for another 5 minutes.
  • Taste and adjust seasoning with salt and pepper if needed.
  • Serve hot, garnished with cilantro and lime wedges.
