2 tablespoons olive oil, plus more for drizzling

1 teaspoon honey

1 clove garlic, minced

1 teaspoon lemon juice

Salt and pepper, to taste

1 French baguette, sliced into ½ inch pieces

1 cup cherry tomatoes, quartered

1/4 cup fresh basil leaves, chopped

Instructions

Prepare Whipped Feta: In a medium bowl, combine the crumbled feta cheese, cream cheese, olive oil, honey, minced garlic, lemon juice, and a pinch of salt and pepper. Using a hand mixer or a food processor, blend until smooth and creamy. Taste and adjust seasoning as needed.

Toast the Bread: Preheat your oven to 400°F (200°C). Arrange the sliced baguette on a baking sheet. Brush the tops lightly with olive oil. Bake for 8-10 minutes or until golden and crispy.

Assemble the Bruschetta: In a separate bowl, mix the quartered cherry tomatoes, chopped basil, and a drizzle of olive oil. Season with salt and pepper to taste.

Top the Bread: Spread a generous layer of the whipped feta mixture on each toasted baguette slice. Then, top with a spoonful of the tomato and basil mixture.

Final Touch: Drizzle with balsamic glaze if desired, and give a final sprinkle of fresh basil for garnish.
