White Bean and Pesto Bake

Ingredients

2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed

1 cup basil pesto (store-bought or homemade)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon dried oregano

½ teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Mix the Base: In a large mixing bowl, combine the drained white beans, ricotta cheese, half of the mozzarella cheese, minced garlic, dried oregano, crushed red pepper flakes (if using), and salt and pepper. Mix well until everything is evenly incorporated.

      Layer the Ingredients: In a greased baking dish (about 9x13 inches), spread half of the bean mixture evenly across the bottom. Next, spread half of the basil pesto over this layer.

        Add More Layers: Add the remaining bean mixture on top of the pesto layer, followed by the second half of the pesto. Finally, sprinkle the remaining mozzarella cheese and grated Parmesan cheese on top.

          Bake It: Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the cheese is melted and bubbly, and the top is lightly golden.

            Garnish and Serve: Once baked, remove from the oven and let cool for a few minutes before garnishing with fresh basil leaves. Serve warm as a main dish or side.
