Ingredients

  • 1 pound fresh green beans trimmed and cut into 1-inch pieces
  • 1 cup mushrooms sliced (cremini or button)
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup low-sodium vegetable broth
  • 1 cup unsweetened almond milk
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce or tamari
  • 1 tablespoon nutritional yeast optional
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste salt and pepper
  • 1 cup whole wheat breadcrumbs
  • ¼ cup slivered almonds

Instructions

  • Preheat your oven to 350°F (175°C).
  • Blanch the green beans in boiling water for 3-4 minutes, then cool in ice water and drain.
  • Heat olive oil in a skillet over medium heat, sauté onion for 5 minutes until translucent.
  • Add mushrooms and cook for 4-5 minutes, then stir in garlic and sauté for 1 minute.
  • Pour in vegetable broth and almond milk, add soy sauce, nutritional yeast, thyme, rosemary, salt, and pepper, and simmer for 5-7 minutes.
  • Fold in the blanched green beans until well-coated with the sauce.
  • Transfer the mixture to a greased 9x13 inch baking dish.
  • Combine breadcrumbs and slivered almonds, then sprinkle over the casserole.
  • Bake for 25-30 minutes until the topping is golden brown.
  • Let cool for a few minutes before serving.
