Ingredients

  • 1 lb boneless skinless chicken thighs
  • 1 tablespoon extra virgin olive oil
  • 1 medium onion diced
  • 1 medium green bell pepper diced
  • 2 celery stalks finely chopped
  • 4 cloves garlic minced
  • 1 can diced tomatoes with liquid
  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • ½ teaspoon cayenne pepper
  • Salt and freshly ground black pepper to taste
  • 1 cup frozen peas
  • 2 green onions thinly sliced
  • Fresh parsley finely chopped

Instructions

  • Warm olive oil in a large pot over medium heat and sauté chicken thighs until golden brown, about 5-7 minutes. Remove and set aside.
  • In the same pot, sauté onion, green bell pepper, and celery for about 5 minutes until tender.
  • Add minced garlic and cook for an additional minute until fragrant.
  • Stir in diced tomatoes, rice, chicken broth, Cajun seasoning, oregano, smoked paprika, and cayenne pepper.
  • Return chicken to the pot, bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until rice is cooked.
  • Fold in frozen peas and cover for an additional 5 minutes to heat through.
  • Fluff the jambalaya with a fork and serve hot, garnished with green onions and parsley.
