Ingredients

  • 1 lb ground beef
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 28 oz crushed tomatoes
  • 4 cups beef broth
  • 2 cups water
  • 2 tsp Italian seasoning
  • 1 tsp red pepper flakes
  • 8 oz lasagna noodles broken
  • 1 cup ricotta cheese
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • fresh basil leaves for garnish
  • salt and freshly ground pepper to taste
  • olive oil for sautéing

Instructions

  • Heat olive oil in a large pot over medium heat and sauté the diced onion for 3-4 minutes until translucent.
  • Add minced garlic and ground beef (or sausage) to the pot, cooking until browned, about 5-7 minutes.
  • Drain excess fat if necessary, then stir in crushed tomatoes, beef broth, and water.
  • Add Italian seasoning and red pepper flakes, seasoning with salt and pepper, and bring to a simmer.
  • Once simmering, add broken lasagna noodles and cook for 8-10 minutes until al dente.
  • Mix ricotta cheese with a pinch of salt and pepper in a separate bowl and set aside.
  • Remove the pot from heat and stir in half of the mozzarella and Parmesan cheese until melted.
  • Ladle soup into bowls, topping with ricotta mixture, remaining cheeses, and fresh basil.
  • Optionally, drizzle olive oil or add crushed red pepper for extra flavor before serving.
