Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 can 15 oz black beans, thoroughly rinsed and drained
  • 1 can 15 oz sweet corn, drained
  • 1 can 14.5 oz diced tomatoes with green chilies
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • to taste salt and freshly ground black pepper
  • 1 juice fresh lime
  • to garnish tortilla strips
  • to garnish fresh cilantro chopped

Instructions

  • Place the boneless chicken breasts at the base of the slow cooker.
  • Layer the rinsed black beans, drained corn, diced tomatoes, chopped onion, and minced garlic on top of the chicken.
  • Pour the low-sodium chicken broth over the layered ingredients.
  • Sprinkle ground cumin, chili powder, salt, and black pepper over the top.
  • Secure the lid and cook on low for 6-8 hours or on high for 3-4 hours.
  • Shred the chicken in the slow cooker about 30 minutes before serving.
  • Stir in the freshly squeezed lime juice just before serving.
