4 medium zucchinis, diced into small pieces

1 large onion, finely chopped

4 cloves garlic, minced

2 cups vegetable broth (low-sodium preferred)

1 cup coconut milk (substitute with heavy cream for a richer option)

1 teaspoon dried thyme

1 teaspoon dried basil

1/2 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

1 tablespoon extra virgin olive oil

1 tablespoon freshly squeezed lemon juice

Fresh basil leaves, torn, for garnish

Instructions

Prepare the Vegetables: Begin by cutting the zucchinis into bite-sized pieces. Chop the onion finely and mince the garlic to release its aromatic oils.

    Sauté Aromatics: In a medium skillet over medium heat, pour in the olive oil. Add the chopped onion and minced garlic, sautéing for about 3-4 minutes until the mixture becomes fragrant and the onion turns translucent.

      Combine Ingredients in the Crockpot: Transfer the sautéed onion and garlic into the crockpot. Mix in the diced zucchinis, vegetable broth, dried thyme, dried basil, smoked paprika, and season generously with salt and pepper. Stir everything together until well combined.

        Cook the Soup: Place the lid on the crockpot and set it to cook on low for 6 to 8 hours or on high for about 3 to 4 hours, until the zucchinis are tender and easily pierced with a fork.
