4 medium-sized russet potatoes

1 small onion

2 large eggs

1/4 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon baking powder

Instructions

Prepare Ingredients: Peel the potatoes and onion. Grate the potatoes and onion using a box grater or food processor. Place the grated mixture in a clean kitchen towel and squeeze out excess moisture.

    Mix the Batter: In a large bowl, combine the grated potatoes and onion with the eggs, flour, salt, pepper, and baking powder. Mix until everything is well incorporated, but do not over-mix.

      Heat the Oil: In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat. You can test the oil by dropping a small spoonful of the batter in; it should sizzle immediately.
