Ingredients

For the crust:

1 ½ cups chocolate graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons sugar

For the cheesecake layer:

16 oz cream cheese, softened

½ cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

For the chocolate mousse layer:

1 cup heavy cream

8 oz semi-sweet chocolate, chopped

¼ cup powdered sugar

1 teaspoon vanilla extract

2 large egg whites

2 tablespoons granulated sugar

For the garnish:

Whipped cream

Chocolate shavings or cocoa powder

Instructions

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a mixing bowl, combine the chocolate graham cracker crumbs, melted butter, and sugar until well mixed.

        - Press the mixture evenly into the bottom of a 9-inch springform pan.

          - Bake for 10 minutes, then let it cool while you prepare the cheesecake layer.

            Make the Cheesecake Layer:

              - In a large bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy.

                - Add in the eggs one at a time, mixing just until combined after each addition.

                  - Pour the cheesecake mixture over the cooled crust and smooth the top.

                    - Bake for 45-50 minutes, or until the center is set but slightly jiggly.

                      - Turn off the oven, crack the door, and let the cheesecake cool in the oven for one hour.

                        Prepare the Chocolate Mousse:

                          - In a heatproof bowl, melt the chopped chocolate over a double boiler or in the microwave, stopping to stir every 30 seconds until smooth. Let it cool slightly.

                            - In another mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.

                              - In a separate bowl, beat the egg whites until soft peaks form, then gradually add the granulated sugar and beat until stiff peaks form.

                                - Gently fold the melted chocolate into the whipped cream until just combined, then fold in the beaten egg whites until no white streaks remain.

                                  Assemble the Cheesecake:

                                    - Once the cheesecake has cooled, spread the chocolate mousse on top evenly.

                                      - Refrigerate for at least 4 hours, or overnight for best results.

                                        Serve:

                                          - When ready to serve, run a knife around the edge of the springform pan and carefully remove the sides.

                                            - Garnish with whipped cream and chocolate shavings or a dusting of cocoa powder.
