Ingredients

1 cup cottage cheese

1 small zucchini, spiralized or diced

1/2 bell pepper, diced (any color)

1/2 cup cherry tomatoes, halved

1/4 cup sliced black olives

1/4 cup shredded mozzarella cheese

1 tsp Italian seasoning (or dried oregano and basil)

1/2 tsp garlic powder

1/4 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Olive oil for drizzling

Instructions

In a medium bowl, mix the cottage cheese with garlic powder, Italian seasoning, salt, and pepper until well combined.

    In a separate bowl, toss the zucchini, bell pepper, cherry tomatoes, and black olives with a drizzle of olive oil, salt, and red pepper flakes if using.

      Preheat your oven to 375°F (190°C).

        In an oven-safe bowl or dish, layer the seasoned cottage cheese mixture at the bottom.

          Top the cottage cheese with the vegetable mixture in an even layer.

            Sprinkle the shredded mozzarella cheese generously over the top.

              Place the bowl in the preheated oven and bake for about 15-20 minutes, or until the cheese is bubbly and lightly golden.

                Once done, remove from oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired, and drizzle with a little extra olive oil before serving.
