1 can (14 oz) diced tomatoes with their juices

4 cups vegetable broth or stock

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon ground ginger

Salt and freshly ground black pepper to taste

2 cups fresh spinach (optional, for added nutrition and color)

Instructions

Begin by prepping your vegetables: peel and cut the sweet potatoes into 1-inch cubes, finely chop the onion, mince the garlic, slice the carrots, and dice the celery and red bell pepper.
