Ground Turkey Sweet Potato Casserole

Ingredients

1 pound ground turkey

2 medium sweet potatoes, peeled and diced

1 cup chopped onion

3 cloves garlic, minced

1 cup frozen corn

1 can (15 oz) black beans, rinsed and drained

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ cup chicken broth

1 cup shredded cheddar cheese (optional)

2 tablespoons olive oil

Fresh cilantro for garnish (optional)

Instructions

Preheat your oven to 375°F (190°C).

    In a large skillet over medium heat, heat olive oil. Add the chopped onion and garlic; sauté until soft and fragrant, about 3-4 minutes.

      Add the ground turkey to the skillet. Cook until browned and cooked through, breaking it up with a spatula, about 5-7 minutes.

        Stir in the diced sweet potatoes, frozen corn, black beans, cumin, smoked paprika, salt, pepper, and chicken broth. Mix well.

          Cover the skillet and simmer for about 15 minutes, or until the sweet potatoes are tender, stirring occasionally. If necessary, add a splash more chicken broth to prevent sticking.

            Transfer the turkey and sweet potato mixture to a greased 9x13 inch casserole dish.

              If using, sprinkle the shredded cheddar cheese evenly over the top of the casserole.

                Bake in the preheated oven for 20-25 minutes, or until heated through and the cheese is bubbly and golden.

                  Remove from the oven and let it sit for 5 minutes. Garnish with fresh cilantro, if desired, before serving.
