Homemade Velveeta (Real Cheese)

Ingredients

2 cups whole milk

1/2 cup heavy cream

1/4 cup unsalted butter

8 oz sharp cheddar cheese, shredded

4 oz mozzarella cheese, shredded

1/4 cup nonfat dry milk powder

1 tsp salt

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp cayenne pepper (optional for spice)

2 tbsp cornstarch mixed with 2 tbsp water (slurry)

Instructions

In a heavy-bottomed saucepan, combine the whole milk, heavy cream, and butter. Heat on medium-low until the butter melts and the mixture is warm but not boiling.

    Gradually add in the sharp cheddar and mozzarella cheese, stirring continuously until fully melted and smooth.

      Stir in the nonfat dry milk powder, salt, garlic powder, onion powder, and cayenne pepper. Mix well to combine all components.

        Slowly pour in the cornstarch slurry while stirring constantly. Continue to cook on low heat until the mixture thickens and reaches a velvety texture, about 5-7 minutes.

          Once thick, remove from heat and allow to cool slightly before pouring it into a mold or container. Press a piece of plastic wrap directly onto the cheese surface to prevent a skin from forming.

            Refrigerate for at least 2 hours or until fully set. Once firm, slice and use as desired!
