Ingredients

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup honey

1/4 cup soy sauce (low sodium recommended)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon sesame oil

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

Salt and pepper to taste

1 tablespoon olive oil

Sesame seeds, for garnish

Green onions, sliced, for garnish

Instructions

In a medium bowl, whisk together the honey, soy sauce, minced garlic, grated ginger, and sesame oil until well combined. Set aside half of the mixture for later use as a glaze.

    In the remaining marinade, add the chicken pieces and toss to coat. Let them marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

      Heat the olive oil in a large skillet over medium-high heat. Once hot, add the marinated chicken pieces in a single layer, shaking off excess marinade.

        Cook the chicken for about 5-7 minutes, turning occasionally, until they are golden brown and fully cooked through (internal temperature should reach 165°F or 75°C).

          Lower the heat, add the reserved honey garlic sauce to the skillet, and bring it to a simmer. Add the cornstarch mixture to the pan, stirring constantly until the sauce thickens (about 2-3 minutes).

            Season with salt and pepper to taste, ensuring the chicken is well-coated with the glaze.

              Remove from heat and transfer the chicken bites to a serving platter. Drizzle with any remaining glaze and sprinkle with sesame seeds and sliced green onions for garnish.

                Serve immediately as an appetizer, over rice, or with stir-fried vegetables.
