1 cup unsalted butter, softened

1 cup granulated sugar

1/2 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 tablespoon instant coffee granules

1/2 cup finely crushed pistachios (plus extra for garnish)

1 cup powdered sugar (for filling)

3 tablespoons unsweetened cocoa powder (for filling)

2 tablespoons milk (for filling)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

    Make the Cookie Dough: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and instant coffee granules until combined. Slowly add the dry mixture to the butter mixture, stirring until just combined. Fold in the finely crushed pistachios.

        Scoop and Shape: Using a cookie scoop or a tablespoon, drop dough onto the prepared baking sheets, leaving enough space between each cookie for spreading. Gently flatten each cookie with your fingers or the bottom of a glass.
