Ingredients

1 cup (226g) unsalted butter, softened

1 ½ cups (300g) granulated sugar

4 large eggs, at room temperature

2 teaspoons pure vanilla extract

2 cups (250g) all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

1 cup (240ml) whole milk, at room temperature

Zest of 1 lemon (optional for a hint of freshness)

Instructions

Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan or line it with parchment paper for easy removal.

    In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer on medium speed until light and fluffy, about 5-7 minutes.

      Add the eggs, one at a time, ensuring each egg is fully incorporated before adding the next. Mix in the vanilla extract until well combined.

        In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

          Gradually add the dry ingredients to the butter mixture, alternating with the milk, starting and ending with the dry ingredients. Mix just until combined; do not overmix.

            If using, fold in the lemon zest gently.

              Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

                Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

                  Once baked, remove from the oven and allow it to cool in the pan for about 15 minutes. Then, transfer the cake to a wire rack to cool completely.
