Ingredients

2 tablespoons olive oil

1 medium onion, diced

2 garlic cloves, minced

1 bell pepper (red or yellow), diced

2 medium zucchinis, sliced

1 cup cherry tomatoes, halved

1 cup corn kernels (fresh or frozen)

1 medium eggplant, cubed

2 cups vegetable broth

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions

Heat Oil: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

    Add Garlic: Stir in the minced garlic and cook for an additional minute until fragrant.

      Sauté Vegetables: Add bell pepper, zucchinis, eggplant, and corn to the pot. Sauté for about 8-10 minutes, stirring occasionally, until the vegetables start to soften.

        Add Tomatoes and Seasoning: Stir in the cherry tomatoes, vegetable broth, dried thyme, and dried basil. Season with salt and pepper to taste.

          Simmer: Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for about 20-25 minutes, until all the vegetables are tender.

            Adjust Seasoning: Taste the stew and adjust seasoning if necessary.
