Ingredients

2 cups cooked, chopped chicken breast (grilled or rotisserie)

1 can (15 oz) black beans, rinsed and drained

1 ½ cups corn kernels (fresh, frozen, or canned)

1 bell pepper (any color), diced

1 cup cherry tomatoes, halved

1 avocado, diced

½ red onion, finely chopped

1 cup shredded lettuce (romaine or iceberg)

½ cup cilantro, chopped

1 cup shredded cheddar cheese

¼ cup sour cream (optional)

½ cup pico de gallo or salsa

3 tablespoons olive oil

2 tablespoons lime juice

1 tsp chili powder

1 tsp cumin

Salt and pepper to taste

Instructions

Prepare the Dressing: In a small bowl, whisk together olive oil, lime juice, chili powder, cumin, salt, and pepper until well combined. Set aside.

    Chop the Ingredients: In a large mixing bowl, combine the chopped chicken, black beans, corn, diced bell pepper, cherry tomatoes, avocado, red onion, shredded lettuce, and cilantro.
